Air Fryer Zucchini Fritters

  • 2 medium zucchini, grated
  • 1 egg, beaten
  • 1/4 cup all-purpose flour
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Steps to Cook:

  1. Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and wring out as much moisture as possible.

  2. In a medium bowl, combine the grated zucchini, beaten egg, all-purpose flour, Parmesan cheese, parsley, garlic powder, salt, and black pepper. Mix well until all the ingredients are evenly distributed.

  3. Preheat your air fryer to 400°F (200°C).

  4. Lightly coat the air fryer basket with cooking spray. Scoop the zucchini mixture by heaping tablespoonfuls and place them in the basket, leaving some space between each fritter.

  5. Air fry the zucchini fritters for 5 minutes. Carefully flip the fritters and air fry for an additional 5 minutes, or until they are golden brown and crispy.

  6. Remove the zucchini fritters from the air fryer and place them on a paper towel-lined plate to absorb any excess oil.

  7. Repeat steps 4-6 with the remaining zucchini mixture, working in batches if necessary, to ensure the fritters are not overcrowded in the basket.

  8. Serve the air-fried zucchini fritters hot, garnished with additional chopped parsley if desired. Enjoy!

Cook’s Note:

  • For best results, make sure to wring out as much moisture from the grated zucchini as possible. This will help the fritters hold their shape and become crispy.
