Air Fryer Zucchini Fritters

Ingredients:
- 2 medium zucchini, grated
- 1 egg, beaten
- 1/4 cup all-purpose flour
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Steps to Cook:

Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and wring out as much moisture as possible.

In a medium bowl, combine the grated zucchini, beaten egg, all-purpose flour, Parmesan cheese, parsley, garlic powder, salt, and black pepper. Mix well until all the ingredients are evenly distributed.

Preheat your air fryer to 400°F (200°C).

Lightly coat the air fryer basket with cooking spray. Scoop the zucchini mixture by heaping tablespoonfuls and place them in the basket, leaving some space between each fritter.
