Authentic Chicken Marsala Recipe

Ingredients:
- 4 boneless, skinless chicken breasts, pounded thin
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 4 tablespoons unsalted butter, divided
- 8 ounces cremini or button mushrooms, sliced
- 1 shallot, minced
- 2 garlic cloves, minced
- 1 cup Marsala wine
- 1 cup chicken broth
- 2 tablespoons fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
Steps to Cook:

Prepare the Chicken:
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness of about 1/4 inch.
- Season the chicken on both sides with salt and pepper.
- Place the flour in a shallow dish and dredge the chicken breasts in the flour, shaking off any excess.

Cook the Chicken:
- In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat.
- Add the chicken breasts to the skillet and cook for 3-4 minutes per side, or until golden brown. Transfer the cooked chicken to a plate and set aside.

Make the Marsala Sauce:
- In the same skillet, heat the remaining 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat.
- Add the sliced mushrooms and sauté for 5-7 minutes, or until they are tender and lightly browned.
- Add the minced shallot and garlic to the skillet and sauté for an additional 1-2 minutes, or until fragrant.
- Pour in the Marsala wine and chicken broth, and use a wooden spoon to scrape up any browned bits from the bottom of the skillet.
- Bring the mixture to a simmer and let it cook for 5-7 minutes, or until the sauce has thickened slightly.

Finish the Dish:
- Return the cooked chicken breasts to the skillet with the Marsala sauce.
- Simmer for an additional 5-7 minutes, or until the chicken is cooked through and the sauce has thickened to your desired consistency.
- Sprinkle the chopped fresh parsley over the top of the chicken and sauce.

- Serve the Chicken Marsala immediately, spooning the sauce over the chicken.
