Breakfast Burrito Recipe with Potatoes

  • 4 medium-sized potatoes, diced
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 6 large eggs, beaten
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled cooked bacon (optional)
  • 4 large whole-wheat tortillas
  • Salt and black pepper to taste

Steps to Cook:

  1. Prepare the Potatoes: a. Wash and peel the potatoes, if desired. b. Dice the potatoes into 1/2-inch cubes. c. In a large skillet, heat the olive oil over medium-high heat. d.   3. Prepare the Eggs: a. In a separate bowl, beat the eggs until well combined. b. Pour the beaten eggs into the skillet with the potatoes and vegetables. c. Gently scramble the eggs, stirring frequently, until they are cooked through but still soft, about 3-5 minutes.

  4. Assemble the Burritos: a. Lay the whole-wheat tortillas on a clean surface. b. Divide the egg and vegetable mixture evenly among the tortillas, placing it in the center. c. Sprinkle the shredded cheddar cheese and crumbled cooked bacon (if using) over the egg mixture. d. Fold the bottom of the tortilla up, then fold in the sides and continue rolling tightly to create the burrito.
