Creamy Brie Penne Pasta with Spinach

Ingredients:

  • 8 oz. (225g) penne pasta
  • 2 tbsp. (30ml) olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 oz. (225g) brie cheese, cubed
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) grated Parmesan cheese
  • 1/4 cup (60ml) dry white wine
  • 2 tbsp. (30ml) lemon juice
  • 1 tsp. (5ml) dried thyme
  • Salt and freshly ground black pepper, to taste
  • 2 cups (480ml) baby spinach, roughly chopped
  • 1/4 cup (60ml) toasted pine nuts (optional)

Steps to Cook:

  1. Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, until translucent.

  3. Add the minced garlic to the skillet and cook for an additional minute, stirring constantly, until fragrant.

  4. Reduce the heat to low and add the cubed brie cheese to the skillet. Stir continuously until the brie has melted and is fully incorporated into the mixture.

  5. Slowly pour in the heavy cream, stirring constantly, and bring the mixture to a gentle simmer. Cook for 2-3 minutes, or until the sauce has thickened slightly.

  6. Add the grated Parmesan cheese, dry white wine, lemon juice, and dried thyme to the skillet. Stir to combine and season with salt and freshly ground black pepper to taste.

  7. Add the cooked penne pasta to the skillet and toss to coat the pasta evenly with the brie sauce.

  8. Stir in the baby spinach and continue cooking for an additional 1-2 minutes, or until the spinach is wilted.

  9. Remove the skillet from the heat and let the pasta sit for 5 minutes to allow the flavors to meld.

  10. Serve the brie pasta hot, garnished with toasted pine nuts (if using).

Cook’s Note:

  • For a richer, creamier sauce, you can use full-fat cream cheese instead of heavy cream.
  • Experiment with different types of cheese, such as goat cheese or gorgonzola, to create your own unique flavor profile.
  • Add diced cooked chicken or grilled shrimp to the pasta for a heartier meal.
  • Garnish with fresh herbs, such as basil or parsley, for an extra boost of flavor.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
