Healthy Food Recipes: Italian Chicken Cutlet Recipes
Prep Time: 15 minutes
Cook Time: 20 minutes
Additional Time: 10 minutes
Total Time: 45 minutes
Servings: 4
Ingredients:
- 4 boneless, skinless chicken breasts, pounded thin to 1/4-inch thickness
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Lemon wedges for serving (optional)
Steps to Cook:
- Preheat your oven to 400°F (200°C).
- Set up a breading station with three shallow bowls:
- In the first bowl, place the flour.
- In the second bowl, place the beaten eggs.
- In the third bowl, mix together the panko breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and black pepper.
- Dredge the pounded chicken breasts in the flour, shaking off any excess.
- Dip the floured chicken into the beaten eggs, coating both sides.
- Gently press the chicken into the breadcrumb mixture, making sure it’s evenly coated on both sides.
- Heat the olive oil in a large, oven-safe skillet over medium-high heat.
- Carefully add the breaded chicken cutlets to the hot oil and cook for 2-3 minutes per side, or until golden brown.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- Remove the skillet from the oven and let the chicken cutlets rest for 5 minutes.
- Serve the Italian chicken cutlets warm, with lemon wedges on the side if desired.
Cook’s Note:
- Pounding the chicken breasts to an even thickness ensures they cook evenly and remain juicy.
- Using panko breadcrumbs instead of regular breadcrumbs creates a delightfully crispy coating.
- Baking the chicken in the oven after pan-frying helps to ensure it’s cooked through without overcooking the outside.
- Feel free to adjust the seasoning to your personal taste preferences.
- Serve the Italian chicken cutlets with your favorite pasta, salad, or roasted vegetables for a complete and healthy meal.
