Healthy Food Recipes: Italian Chicken Cutlet Recipes

Prep Time: 15 minutes

Cook Time: 20 minutes

Additional Time: 10 minutes

Total Time: 45 minutes

Servings: 4

  • 4 boneless, skinless chicken breasts, pounded thin to 1/4-inch thickness
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Lemon wedges for serving (optional)

Steps to Cook:

  1. Preheat your oven to 400°F (200°C).
  2. Set up a breading station with three shallow bowls:
    • In the first bowl, place the flour.
    • In the second bowl, place the beaten eggs.
    • In the third bowl, mix together the panko breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and black pepper.
  3. Dredge the pounded chicken breasts in the flour, shaking off any excess.
  4. Dip the floured chicken into the beaten eggs, coating both sides.
  5. Gently press the chicken into the breadcrumb mixture, making sure it’s evenly coated on both sides.
  6. Heat the olive oil in a large, oven-safe skillet over medium-high heat.
  7. Carefully add the breaded chicken cutlets to the hot oil and cook for 2-3 minutes per side, or until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
  9. Remove the skillet from the oven and let the chicken cutlets rest for 5 minutes.
  10. Serve the Italian chicken cutlets warm, with lemon wedges on the side if desired.

Cook’s Note:

  • Pounding the chicken breasts to an even thickness ensures they cook evenly and remain juicy.
  • Using panko breadcrumbs instead of regular breadcrumbs creates a delightfully crispy coating.
  • Baking the chicken in the oven after pan-frying helps to ensure it’s cooked through without overcooking the outside.
  • Feel free to adjust the seasoning to your personal taste preferences.
  • Serve the Italian chicken cutlets with your favorite pasta, salad, or roasted vegetables for a complete and healthy meal.
