Ingredients
- 1 lb fresh spinach, washed and stems removed
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon grated lemon zest
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons grated Parmesan cheese (optional)
Steps to Cook
- Wash the spinach thoroughly and remove any tough stems. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant and lightly golden.
- Add the spinach to the skillet, a handful at a time, and cook, stirring frequently, until the spinach is wilted, about 3-5 minutes.
- Once the spinach is wilted, remove the skillet from the heat and stir in the lemon juice, lemon zest, and red pepper flakes (if using). Season with salt and freshly ground black pepper to taste.
- Transfer the lemon garlic spinach to a serving dish and sprinkle with the Parmesan cheese, if desired.
Cook’s Note
- For a heartier dish, you can add some cooked chickpeas or white beans to the spinach.
- If you prefer a creamier texture, you can stir in a tablespoon or two of heavy cream or Greek yogurt at the end.
