Air Fryer Zucchini Fritters

Ingredients:

  • 2 medium zucchini, grated
  • 1 egg, beaten
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Steps to Cook:

  1. Preheat the air fryer to 400°F (200°C).
  2. In a medium bowl, combine the grated zucchini, beaten egg, all-purpose flour, Parmesan cheese, chopped parsley, garlic powder, salt, and black pepper. Mix well until the ingredients are evenly distributed.
  3. Spray the air fryer basket with cooking spray.
  4. Scoop heaping tablespoons of the zucchini mixture and place them in the air fryer basket, making sure to leave some space between the fritters.
  5. Air fry the zucchini fritters for 5 minutes.
  6. Flip the fritters and air fry for an additional 5 minutes, or until they are golden brown and crispy.
  7. Remove the cooked zucchini fritters from the air fryer and place them on a paper towel-lined plate to absorb any excess oil.
  8. Repeat steps 4-7 with the remaining zucchini mixture, working in batches if necessary.

Cook’s Note:

  • For best results, be sure to grate the zucchini using a box grater or food processor, and then squeeze out any excess moisture with your hands or a clean kitchen towel.
  • Adjust the cooking time as needed, depending on the size and thickness of your zucchini fritters.
  • Serve the air fryer zucchini fritters warm, garnished with additional chopped parsley if desired. They can be enjoyed as a side dish or a healthy snack.
  • These fritters are best eaten fresh, but any leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
