Authentic Chicken Marsala Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts, pounded thin
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 4 tablespoons unsalted butter, divided
  • 8 ounces cremini or button mushrooms, sliced
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste

Steps to Cook:

  1. Prepare the Chicken:

    • Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness of about 1/4 inch.
    • Season the chicken on both sides with salt and pepper.
    • Place the flour in a shallow dish and dredge the chicken breasts in the flour, shaking off any excess.
  2. Cook the Chicken:

    • In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat.
    • Add the chicken breasts to the skillet and cook for 3-4 minutes per side, or until golden brown. Transfer the cooked chicken to a plate and set aside.
  3. Make the Marsala Sauce:

    • In the same skillet, heat the remaining 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat.
    • Add the sliced mushrooms and sauté for 5-7 minutes, or until they are tender and lightly browned.
    • Add the minced shallot and garlic to the skillet and sauté for an additional 1-2 minutes, or until fragrant.
    • Pour in the Marsala wine and chicken broth, and use a wooden spoon to scrape up any browned bits from the bottom of the skillet.
    • Bring the mixture to a simmer and let it cook for 5-7 minutes, or until the sauce has thickened slightly.
  4. Finish the Dish:

    • Return the cooked chicken breasts to the skillet with the Marsala sauce.
    • Simmer for an additional 5-7 minutes, or until the chicken is cooked through and the sauce has thickened to your desired consistency.
    • Sprinkle the chopped fresh parsley over the top of the chicken and sauce.
  5. Serve and Enjoy:

    • Serve the Chicken Marsala immediately, spooning the sauce over the chicken.
    • Enjoy the dish with your favorite sides, such as roasted potatoes, steamed vegetables, or a fresh green salad.

Cook’s Note:

  • For best results, use a dry Marsala wine, which will provide a more robust flavor to the sauce.
  • If the sauce becomes too thick, you can thin it out by adding a splash of chicken broth or water.
