Healthy Food Recipes: Best Oil for Chicken Cutlets

Prep Time: 10 minutes

Cook Time: 15 minutes

Additional Time: 5 minutes

Total Time: 30 minutes

Servings: 4

Ingredients:

  • 4 boneless, skinless chicken breasts, pounded thin and cut into cutlets
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons olive oil, divided
  • 3 tablespoons avocado oil, divided

Steps to Cook:

  1. Prepare the Chicken Cutlets:

    • Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them to an even thickness of about 1/4 inch.
    • Cut the pounded chicken into cutlets, about 4 pieces per breast.
    • Season the cutlets with salt and pepper.
  2. Set Up the Breading Station:

    • Place the flour in a shallow dish.
    • In a second shallow dish, whisk the eggs.
    • In a third shallow dish, combine the panko breadcrumbs, Parmesan cheese, and chopped parsley.
  3. Bread the Chicken Cutlets:

    • Dredge the chicken cutlets in the flour, coating both sides.
    • Dip the floured cutlets in the beaten eggs, allowing any excess to drip off.
    • Finally, coat the cutlets in the panko-Parmesan mixture, pressing gently to help the breading adhere.
  4. Cook the Chicken Cutlets:

    • In a large skillet, heat 1 1/2 tablespoons of olive oil and 1 1/2 tablespoons of avocado oil over medium-high heat.
    • Working in batches, if necessary, add the breaded chicken cutlets to the hot oil and cook for 3-4 minutes per side, or until golden brown and cooked through.
    • Transfer the cooked cutlets to a paper towel-lined plate.
    • Repeat the process, adding the remaining 1 1/2 tablespoons of each oil to the skillet, as needed, to cook all the cutlets.
  5. Serve and Enjoy:

    • Serve the chicken cutlets warm, garnished with additional chopped parsley, if desired.
    • Pair the cutlets with your favorite sides, such as roasted vegetables, a fresh salad, or mashed potatoes.

Cook’s Note:

  • The combination of olive oil and avocado oil provides a balanced flavor and high smoke point, allowing the chicken cutlets to cook evenly and achieve a crispy golden-brown crust.
  • Pounding the chicken breasts to an even thickness ensures they cook through uniformly.
  • Using a mixture of panko breadcrumbs and Parmesan cheese creates a delightfully crunchy and flavorful coating.
  • Adjust the cooking time as needed, depending on the thickness of your chicken cutlets.
  • For a healthier option, you can bake the breaded chicken cutlets in the oven at 400°F (200°C) for 15-20 minutes, flipping halfway through.
