Ingredients

  • 8 chicken drumsticks or thighs
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Vegetable oil or peanut oil for frying (about 4 cups)

Steps to Cook

1. Marinate the Chicken

a. Place the chicken drumsticks or thighs in a large resealable plastic bag. b. Pour in the buttermilk and add the salt and black pepper. c. Seal the bag and refrigerate for 30 minutes to 1 hour, turning the bag occasionally.

2. Prepare the Breading

a. In a shallow bowl, combine the flour, paprika, garlic powder, and onion powder. Mix well.

3. Fry the Chicken

a. In a large heavy-bottomed pot or Dutch oven, heat the vegetable or peanut oil to 350°F. b. Remove the chicken from the buttermilk one piece at a time, allowing any excess to drip off. c. Dredge the chicken in the seasoned flour, coating it evenly on all sides. d. Carefully add the breaded chicken to the hot oil, being careful not to overcrowd the pot. e. Fry the chicken for 15-20 minutes, turning occasionally, until the internal temperature reaches 165°F. f. Remove the fried chicken from the oil and place it on a paper towel-lined plate to drain. g. Repeat the frying process with the remaining chicken pieces.

4. Serve and Enjoy

a. Serve the fried chicken hot, garnished with fresh parsley or your desired accompaniments.

Cook’s Note

  • The key to crispy fried chicken is using the right oil and maintaining the proper frying temperature. Vegetable oil or peanut oil are excellent choices as they have a high smoke point, allowing you to fry the chicken at a consistent temperature.
  • Marinating the chicken in buttermilk helps to tenderize the meat and adds moisture, resulting in a juicier final product.
  • Dredging the chicken in seasoned flour creates a delicious, crispy crust that seals in the juices.
  • Be careful when frying the chicken, as the hot oil can be dangerous. Use caution and maintain a safe distance.
  • Serve the fried chicken immediately for the best texture and flavor. Enjoy!
