Breakfast Burrito Recipe with Potatoes

Servings: 4 burritos

Ingredients:

  • 4 medium-sized potatoes, diced
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 4 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 large tortillas
  • Optional toppings: salsa, sour cream, avocado, hot sauce

Steps to Cook:

  1. Prepare the Potatoes:

    • Wash the potatoes and dice them into 1/2-inch cubes.
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the diced potatoes to the skillet and cook, stirring occasionally, until they are tender and lightly browned, about 15-20 minutes.
  2. Cook the Vegetables:

    • Add the diced onion and bell pepper to the skillet with the cooked potatoes.
    • Continue cooking, stirring occasionally, until the vegetables are softened and lightly caramelized, about 5-7 minutes.
  3. Prepare the Eggs:

    • In a medium bowl, whisk together the eggs, milk, salt, and black pepper.
    • Pour the egg mixture into the skillet with the potatoes and vegetables.
    • Cook, stirring frequently, until the eggs are scrambled and cooked through, about 3-5 minutes.
  4. Assemble the Burritos:

    • Lay the tortillas on a flat surface.
    • Divide the potato, egg, and vegetable mixture evenly among the tortillas, placing it in the center of each one.
    • Sprinkle the shredded cheddar cheese over the filling.
    • Fold the bottom of the tortilla up over the filling, then fold in the sides and continue rolling up tightly to create a burrito.
  5. Serve and Enjoy:

    • Serve the breakfast burritos immediately, either as is or with your desired toppings, such as salsa, sour cream, avocado, or hot sauce.

Cook’s Note:

  • For a spicier version, you can add diced jalapeño or a pinch of cayenne pepper to the egg mixture.
  • To make the burritos in advance, you can wrap them individually in foil or parchment paper and refrigerate or freeze them. When ready to serve, reheat the burritos in the oven or microwave.
  • Feel free to customize the fillings by adding other vegetables, meats, or different types of cheese to suit your preferences.
