Ingredients

  • 8 oz. penne pasta
  • 4 oz. brie cheese, rind removed and cut into cubes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp. dried thyme
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. salt
  • 2 tbsp. chopped fresh parsley

Steps to Cook

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain the pasta and set aside.

  2. In a medium saucepan, combine the heavy cream, Parmesan cheese, garlic, thyme, black pepper, and salt. Cook over medium heat, stirring occasionally, until the cheese has melted and the sauce is smooth, about 5 minutes.

  3. Add the cubed brie cheese to the sauce and continue to cook, stirring frequently, until the brie has melted and the sauce is creamy, about 3-5 minutes.

  4. Add the cooked penne pasta to the brie cheese sauce and toss to coat the pasta evenly.

  5. Serve the brie cheese pasta immediately, garnished with the chopped fresh parsley.

Cook’s Note

  • For a richer, creamier sauce, you can add an extra 2-3 ounces of brie cheese.
  • If the sauce becomes too thick, you can thin it out with a splash of the pasta cooking water.
  • Feel free to experiment with different types of pasta, such as fusilli or farfalle, in this recipe.
