Brie Pasta with Basil

Ingredients:

  • 8 oz. penne pasta
  • 2 tbsp. olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 8 oz. brie cheese, cubed
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper

Steps to Cook:

  1. Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes, or until the onion is translucent.

  3. Add the minced garlic to the skillet and cook for an additional minute, stirring constantly to prevent the garlic from burning.

  4. Reduce the heat to low and add the cubed brie cheese to the skillet. Stir constantly until the brie has melted and is fully incorporated into the onion mixture.

  5. Slowly pour in the heavy cream, stirring continuously to create a smooth, creamy sauce.

  6. Add the cooked penne pasta to the skillet and toss to coat the pasta evenly with the brie sauce.

  7. Stir in the grated Parmesan cheese, chopped fresh basil, salt, and black pepper. Taste and adjust seasoning as needed.

  8. Serve the brie pasta immediately, garnished with additional fresh basil if desired.

Cook’s Note:

  • For a richer, creamier sauce, you can use half-and-half or a combination of heavy cream and milk.
  • To make this dish vegetarian, use a vegetarian-friendly Parmesan cheese or omit it altogether.
  • If the sauce becomes too thick, you can thin it out with a splash of the pasta cooking water.
  • Brie can be a soft and creamy cheese, so be gentle when stirring to avoid breaking it down too much.
  • This recipe can be easily doubled or tripled to serve a larger crowd.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave before serving.
