Ingredients:

  • 4 flounder fillets (about 1 lb total)
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon zest
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Steps to Cook:

  1. Preheat the oven to broil and line a baking sheet with foil.
  2. In a small bowl, combine the panko breadcrumbs, Parmesan cheese, parsley, lemon zest, olive oil, salt, and black pepper.
  3. Place the flounder fillets on the prepared baking sheet and top each fillet with the breadcrumb mixture, pressing it down gently to adhere.
  4. Broil the flounder for 12-15 minutes, or until the fish flakes easily with a fork and the internal temperature reaches 145°F.
