Healthy Food Recipes: Chicken Bacon Ranch Skillet

Ingredients:

  • 1 lb. boneless, skinless chicken breasts, cut into 1-inch pieces
  • 4 slices bacon, diced
  • 1 tbsp. olive oil
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 cup diced bell pepper
  • 1 cup diced tomatoes
  • 1 cup low-sodium chicken broth
  • 1 cup plain Greek yogurt
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp. chopped fresh parsley
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Steps to Cook:

  1. In a large skillet over medium-high heat, cook the diced bacon until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the bacon grease in the pan.

  2. Add the olive oil to the skillet with the bacon grease. Add the chicken pieces and cook, stirring occasionally, until the chicken is browned and cooked through, about 8-10 minutes. Remove the chicken from the skillet and set aside.

  3. Reduce the heat to medium and add the diced onion to the skillet. Cook for 3-4 minutes, stirring occasionally, until the onion is translucent.

  4. Add the minced garlic to the skillet and cook for 1 minute, stirring constantly, until fragrant.

  5. Add the sliced mushrooms, diced bell pepper, and diced tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.

  6. Pour the low-sodium chicken broth into the skillet and use a wooden spoon to scrape up any browned bits from the bottom of the pan.

  7. Stir in the plain Greek yogurt, shredded cheddar cheese, chopped fresh parsley, dried oregano, salt, and black pepper. Bring the mixture to a simmer and cook for 2-3 minutes, stirring occasionally, until the cheese is melted and the sauce is slightly thickened.

  8. Add the cooked chicken back to the skillet and stir to combine. Cook for an additional 2-3 minutes, or until the chicken is heated through.

  9. Remove the skillet from the heat and sprinkle the cooked bacon on top.

Cook’s Note:

  • For a creamier sauce, you can use a full-fat Greek yogurt instead of plain.
  • Feel free to adjust the amount of cheese or bacon to your taste preferences.
  • Serve the chicken bacon ranch skillet over cooked rice, quinoa, or cauliflower rice for a complete meal.
  • Garnish with additional chopped parsley or green onions, if desired.
