Healthy Food Recipes: Chicken Cutlets Italian

Prep Time: 15 minutes

Cook Time: 20 minutes

Additional Time: 10 minutes (resting)

Total Time: 45 minutes

Servings: 4

Ingredients:

  • 4 boneless, skinless chicken breasts, pounded to 1/4-inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup marinara sauce, warmed
  • 4 slices mozzarella cheese

Steps to Cook:

  1. Prepare the Chicken: a. Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them with a meat mallet or rolling pin until they are 1/4-inch thick. b. Set up three shallow dishes: one with the flour, one with the beaten eggs, and one with the breadcrumbs, Parmesan, oregano, garlic powder, salt, and pepper mixed together. c. Dredge the chicken cutlets in the flour, dip them in the egg, and then coat them with the breadcrumb mixture, pressing gently to adhere.

  2. Cook the Chicken: a. Heat the olive oil in a large skillet over medium-high heat. b. Working in batches if necessary, add the breaded chicken cutlets to the hot oil and cook for 3-4 minutes per side, or until golden brown and cooked through. c. Transfer the cooked cutlets to a paper towel-lined plate.

  3. Assemble and Bake: a. Preheat your oven to 400°F (200°C). b. Spread a thin layer of marinara sauce in the bottom of a baking dish. c. Arrange the cooked chicken cutlets in the baking dish and top each one with a slice of mozzarella cheese. d. Bake for 10 minutes, or until the cheese is melted and bubbly.

  4. Serve and Enjoy: a. Remove the baked chicken cutlets from the oven and let them rest for 5-10 minutes. b. Serve the chicken cutlets with the remaining warm marinara sauce on the side.

Cook’s Note:

  • For best results, use fresh, high-quality chicken breasts and Italian-style breadcrumbs.
  • You can adjust the amount of Parmesan cheese or seasonings to suit your personal taste preferences.
  • If you prefer a crispier coating, you can fry the chicken cutlets in a shallow layer of oil instead of baking them.
  • Serve the chicken cutlets with a side salad, roasted vegetables, or your favorite pasta for a complete Italian-inspired meal.
