Chicken Cutlets Italian Recipe

Prep Time: 15 minutes

Cook Time: 20 minutes

Additional Time: 10 minutes

Total Time: 45 minutes

Servings: 4

Ingredients:

  • 4 boneless, skinless chicken breasts, pounded thin into cutlets
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 (24 oz) jar marinara sauce
  • 8 oz fresh mozzarella cheese, sliced

Steps to Cook:

  1. Prepare the Chicken Cutlets: a. Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them with a meat mallet or rolling pin until they are about 1/4-inch thick. b. Set up three shallow dishes: one with the flour, one with the beaten eggs, and one with a mixture of the panko, Parmesan, Italian seasoning, garlic powder, salt, and pepper. c. Dredge the chicken cutlets in the flour, dip them in the beaten eggs, and then coat them in the panko-Parmesan mixture, pressing gently to adhere.

  2. Cook the Chicken Cutlets: a. Heat the olive oil in a large skillet over medium-high heat. b. Working in batches if necessary, add the breaded chicken cutlets to the hot oil and cook for 3-4 minutes per side, or until golden brown and cooked through. c. Transfer the cooked cutlets to a paper towel-lined plate.

  3. Assemble and Bake: a. Preheat your oven to 400°F (200°C). b. Spread a thin layer of marinara sauce in the bottom of a 9x13-inch baking dish. c. Arrange the cooked chicken cutlets in a single layer on top of the sauce. d. Top each cutlet with a slice of fresh mozzarella cheese. e. Bake for 10 minutes, or until the cheese is melted and bubbly.

  4. Serve and Enjoy: a. Serve the chicken cutlets immediately, with the remaining marinara sauce spooned over the top, if desired. b. Enjoy your delicious Italian-style chicken cutlets!

Cook’s Note:

  • For best results, use thin-sliced chicken breasts or pound the chicken breasts to an even thickness before breading. This will ensure even cooking.
  • You can adjust the amount of Parmesan cheese or breadcrumbs to your personal preference.
  • If you have time, let the breaded chicken cutlets rest for 10-15 minutes before frying. This will help the breading adhere better.
  • Serve the chicken cutlets with a side of pasta, roasted vegetables, or a fresh salad for a complete Italian-inspired meal.
