Pasta and Brie Cheese

Ingredients

  1. 8 oz. whole-wheat pasta (such as penne or fusilli)
  2. 2 tablespoons olive oil
  3. 1 onion, diced
  4. 3 cloves garlic, minced
  5. 8 oz. brie cheese, rind removed and cut into cubes
  6. 1 cup halved cherry tomatoes
  7. 1/2 cup fresh basil leaves, chopped
  8. 1/4 cup grated Parmesan cheese
  9. Salt and black pepper to taste

Steps to Cook

  1. Bring a large pot of salted water to a boil. Add the whole-wheat pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes, until translucent.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
  4. Add the cooked pasta, brie cheese cubes, and halved cherry tomatoes to the skillet. Gently toss everything together until the brie cheese starts to melt and create a creamy sauce.
  5. Remove the skillet from the heat and stir in the chopped fresh basil leaves and grated Parmesan cheese. Season with salt and black pepper to taste.
  6. Serve the pasta and brie cheese mixture warm, garnished with additional fresh basil leaves if desired.

Cook’s Note

  • For a creamier texture, you can add a splash of milk or heavy cream to the skillet along with the brie cheese.
  • If you prefer a firmer texture, you can bake the pasta and brie cheese mixture in a baking dish at 375°F (190°C) for 10-15 minutes, or until the cheese is melted and bubbly.

Baked Brie and Pasta Casserole

Ingredients

  1. 12 oz. whole-wheat pasta (such as penne or rigatoni)
  2. 8 oz. brie cheese, rind removed and cut into cubes
  3. 1 cup halved cherry tomatoes
  4. 1/2 cup chopped fresh spinach
  5. 1/4 cup grated Parmesan cheese
  6. 2 tablespoons breadcrumbs
  7. 2 tablespoons olive oil
  8. 2 cloves garlic, minced
  9. Salt and black pepper to taste

Steps to Cook

  1. Preheat your oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the whole-wheat pasta and cook according to package instructions until al dente. Drain and set aside.
  3. In a large mixing bowl, combine the cooked pasta, brie cheese cubes, halved cherry tomatoes, and chopped fresh spinach. Gently toss everything together.
  4. Transfer the pasta and brie cheese mixture to a 9x13 inch baking dish.
  5. In a small bowl, mix together the grated Parmesan cheese and breadcrumbs. Sprinkle this mixture evenly over the top of the pasta and brie cheese.
