Lacinato Kale Salad with Roasted Chickpeas and Lemon Vinaigrette

Prep Time: 15 minutes Cook Time: 25 minutes Additional Time: 5 minutes Total Time: 45 minutes Servings: 4

Ingredients:

  • 1 bunch lacinato kale, stems removed and leaves thinly sliced
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 2 tablespoons olive oil, divided
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 2 tablespoons grated Parmesan cheese (optional)

Steps to Cook:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the chickpeas with 1 tablespoon of olive oil, paprika, garlic powder, salt, and black pepper.
  3. Spread the seasoned chickpeas on a baking sheet and roast for 20-25 minutes, stirring occasionally, until crispy.
  4. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, Dijon mustard, and honey to make the vinaigrette.
  5. Add the sliced lacinato kale to a large salad bowl.
  6. Pour the lemon vinaigrette over the kale and massage it into the leaves with your hands until the kale is slightly softened and coated in the dressing.
  7. Top the kale salad with the roasted chickpeas and Parmesan cheese (if using).

Cook’s Note:

  • Massaging the kale with the dressing helps to break down the tough leaves and make them more tender and easier to chew.
  • For a heartier meal, you can add cooked quinoa, grilled chicken, or roasted sweet potatoes to the salad.
  • The roasted chickpeas can be made in advance and stored in an airtight container for up to 3 days.

Ingredients:

  • 1 bunch lacinato kale, stems removed and leaves thinly sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Steps to Cook:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and red pepper flakes (if using) to the skillet and sauté for 1-2 minutes, until fragrant.
  3. Add the sliced lacinato kale to the skillet and sauté for 5-7 minutes, stirring occasionally, until the kale is wilted and tender.
  4. Remove the skillet from the heat and stir in the lemon juice, salt, and black pepper.
  5. Serve the sautéed lacinato kale warm or at room temperature.

Cook’s Note:

  • For a more substantial meal, you can serve the sautéed kale over cooked quinoa or brown rice.
  • To add more protein, you can top the kale with grilled chicken, roasted chickpeas, or a fried egg.
  • The lemon juice helps to balance the slightly bitter taste of the kale and adds a bright, refreshing flavor.
