Tuscan Kale Recipe

Ingredients:

  • 1 bunch of Tuscan kale, stems removed and leaves chopped into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves of garlic, minced
  • 1/4 cup low-sodium vegetable or chicken broth
  • 2 tablespoons lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)

Steps to Cook:

  1. Prepare the Kale:

    • Wash the Tuscan kale thoroughly and pat it dry with a clean towel or paper towels.
    • Remove the tough stems from the kale leaves and discard them.
    • Chop the kale leaves into bite-sized pieces, approximately 1-inch in size.
  2. Sauté the Garlic:

    • In a large skillet or sauté pan, heat the olive oil over medium heat.
    • Add the minced garlic and sauté for 1-2 minutes, stirring frequently, until fragrant and lightly golden.
  3. Cook the Kale:

    • Add the chopped Tuscan kale to the skillet and stir to coat the leaves with the garlic-infused oil.
    • Pour in the vegetable or chicken broth and bring the mixture to a gentle simmer.
    • Cover the skillet with a lid and cook the kale for 15-20 minutes, stirring occasionally, until the kale is tender and the liquid has mostly evaporated.
  4. Season and Serve:

    • Remove the lid and stir in the lemon juice and red pepper flakes (if using).
    • Season the cooked kale with salt and freshly ground black pepper to taste.
    • If desired, sprinkle the grated Parmesan cheese over the top of the kale.
    • Serve the Tuscan kale warm, as a side dish or as a main course.

Cook’s Note:

  • For a heartier meal, you can add cooked chickpeas, diced roasted sweet potatoes, or crumbled feta cheese to the Tuscan kale.
  • If the kale seems too dry during cooking, you can add a splash of additional broth or water to the skillet.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently before serving.
  • Adjust the amount of red pepper flakes according to your desired level of spiciness.
  • This recipe can be easily doubled or tripled to serve a larger group.
